Fukui prefecture is the birthplace of koshihikari rice.
Local farmers thoroughly study the rice and go through trial-and-error processes to make sure that it is high quality.
We could choose rice from other regions but to make local sake, local rice is needed. This rice is also offered to the gods during the yearly Gokito festival. We brew our sake in gratitude for being able to use the local rice.
