When we heard that the chief priest of the venerable shrine close to our storehouse, the “Tsuchimikado Main Shrine,” had bought our local sake “Wakasa,” I took the opportunity to meet with him to express my thanks.
That’s when he taught me that the phases of the moon have a profound influence on the growth of crops. Also, we learned that there are days on the calendar which have various meanings, such as “a good day to start something,” “a day to finish the work,” and “a day when it’s best to rest.” We tried applying these things in the brewing control schedule.

Biodynamic is a farming method proposed by the Australian philosopher Rudolph Steiner in 1924. It aims for stable agricultural production that activates the vital power that plants have, with the one guideline being an agricultural calendar that emphasizes harmonizing the growth of plants with the movements of the moon and the stars. Therefore, the biodynamic method emphasizes the rhythm of the phases of the moon.
Although they aren’t so familiar with producing sake, a naturalist biodynamic wine is produced in Europe.

The way of Yin and Yang is a teaching that was formed based on the ancient Chinese theory of the five elements of Yin and Yang.
It applies the five elements of wood, fire, earth, metal, and water, the sun and the moon, and the twelve signs of the Chinese zodiac in combination with the way of compatible and conflicting relationships to judge good or bad fortune. We could say that it’s a divination teaching which developed independently in Japan with influences from Shinto and Buddhism, and uses astronomy, the calendar, magic, and astrology.
People who used this way of Yin and Yang to make astronomical observations, divine the good and bad of things, create calendars, and exorcise spirits were called sorcerers (onmyoji).
Seimei Abe was a sorcerer who was treated as a mysterious god of divination, a person with supernatural powers, and an expert in the way of Yin and Yang during the Heian Period.
